What? Read that again. How did you get that from anything Jesus said? The entire Bible says yes, religion DOES matter, because that's what believing in God and following Christ IS. You may also notice that the evidence you gave for how to worship does not explain how, simply that it must be honest. The question of "How can we best worship Him" fell to Man to answer, and earnest participation in the Mass is our best attempt.

There is a historical trend of religions being co-opted by the state, in Japan (with Shinto) and China, but also England and other Protestant countries with state churches. The Protestant Reformation itself is as much a result of German princes trying to increase their own power as Luther's objections.
Those "intermediaries" you decry are the ones who compiled the Bible, which was itself written by more of God's intermediaries, Matthew, Mark, Luke, John, Paul, etc. You can read through the Bible, and with one exception in Jesus Christ Himself, God worked through an intermediary: Abraham, Moses, Joshua, Isaiah, Peter, Paul, etc. You will stop needing God's intermediaries when He speaks to you directly, and that is far from likely.
Those "mandated rituals" are methods of worship and the Sacraments, which exist to reflect and bestow what Jesus gave to his disciples while he was here bodily. You'll also notice that the New Testament has plenty of why to worship, but no how. The "mandated rituals" you bemoan answer the "how" question.
And if you believe Catholics worship the Pope, you're wilfully ignorant. People stand and wave for all kinds of parades.

Back in the 800s, Charlemagne gave a strip of Italy to the Pope, and this independence served to limit the pressure princes could put on him, especially when compared to the Patriarch of Constantinople, who was all but the Byzantine Emperor's lapdog. Mussolini later reconstituted this, of sorts, with the Vatican we know today.

I think the "Once Saved Always Saved" crowd are partly to blame. The idea that, once you recognize Jesus Christ as God and believe in the salvation He has given, there is nothing you can do to get out of heaven is poisonous to Christianity, and as such denounced as heresy.
This false doctrine gives license to those who choose the Satanists' "Do as thou wilt" over doing what is right. These subversions may flow one into the other or from the same root, but they appear undeniably related.
