Why do you phrase your questions as pseudo-arguments? As if your lack of understanding could somehow lead you to truth?
I'm not trying to attack you, but I feel this is the most common form of skepticism I see on the internet. Many skeptics raise decent questions and show verses that are in apparent "contradiction." However, instead of trying to acquire a better understanding, you lay your questions like traps for the layman in an attempt to confuse them and also to reaffirm your ignorant views. Let me phrase it in another way: If you had a math question, would you ask the student or the teacher?
I've recently had this issue with the topic of reliability of Biblical manuscripts, and after researching the topic I'm astounded at what I've found. If you'd like to learn more about that let me know. All I'm trying to suggest is that if you explored the answers to your questions I think you would be amazed at what you find and it would bring you closer to God.
Now, to attempt to give an answer to your question, I would say it was to test man. Man was made Good and in God's image so God wished to see if they would be loyal and faithful to Him. They were given one, SINGLE, order. To not eat the fruit from the tree of knowledge. To trust that God knew what was best for them. And in an attempt to be equal with God and thinking they knew what was best for themselves, they ate the fruit. Instantly man was stuck in bondage to sin and separated from God. This is seen by Adam and Eve trying to clothe themselves and hide from God. They knew instantly they did something wrong.
Let me draw a few parallels to modern life: Has human intellect without God's law been a force for good or evil? When you see all of the men mutilating themselves, when you get called a bigot and evil for disagreeing with transgender ideology, when you see the term "birthing people" how do you feel? How do you feel knowing innocent children are being indoctrinated into lunacy and delusion about themselves?
Also, you might call one a friend or companion, but do you say this after sharing a bit of time with them, or after going through hardships that test your trust in one another and morals?
Regardless, Adam and Eve were tested just like Job, Jonah, and Jesus.
I have to get ready for work now. I'm sure what I've said might raise more questions, and I would just like to remind you that this is not an area I'm very knowledgeable about. I really think you should pray to Jesus and ask him to help you find him and to forgive you for your sins. I think you will be amazed at what happens in your life.

Maybe you're getting caught up in the wording? In the Abrahamic covenant God offered 3 central promises: a promise of land (Palestinian covenant), a promise of seed (Davidic covenant), and a promise of blessing (The New covenant). It is absolutely right to say the New Covenant completes and fulfills the old. That is what Jesus died for. He died for our sins so we may be justified. People should absolutely not be beating chickens to death to try and get right with God.

It's important to see the Bible in historic context in these cases though. Obviously that verse is not talking about COVID. The Bible is not about medical/health procedures. Plenty of verses (Especially OT) is mere historical reference and not used to build up doctrine directly.
