how does this argument even exist? a kg of beef is mostly meat and some fat. a kg of locusts is a little meat, a lot of arthropod shell, and brains and eyes and guts and antennae.

To be fair, exoskeletons consist of a densely woven mesh of protein (sclerotin) and carbohydrate (chitin). So they are extremely high in protein.

However, urine is about 95% water, but you still shouldn't knock back a tall glass of it to stay hydrated. A small amount of contaminant can render something poisonous. As has been mentioned here, when you eat bugs, you're eating actual bug shit, gastric juices, hemolymph, and other disgusting things. Bugs are too small to economically remove all the waste byproducts, so they go right into the food. It would be analogous to grinding an entire cow - manure and all - into a paste and then serving that up. Almost anyone would rightfully be disgusted.

As it turns out, you can't just measure the protein content of a substance and declare it a health food.

Surprisingly, it is. Cooked, anyway. Chitin is what mushrooms are made of, and sclerotin is analogous to keratin, which becomes digestible when prepared properly.

Still, powdered keratin isn't a terribly good source of protein, so there's no reason to assume sclerotin would be either. Passable, but considering the amount of processing necessary to make it mostly digestible, not worth the effort.

I tend to think if it made good foodstuff shellfish shells would be used more in Asia rather than mostly just boiled for broth or refined for extracts (like the chitosan I just dumped in a cider brew!). I have seen stuff made from fried shrimp shells, but it was more like a crunchy garnish than a dish.

Overall I think it just makes a lot more sense to grow bugs to feed chickens, chickens don't have the exoskeleton problem...or just farming the meaty underwater sorts of bugs everyone already likes to eat.

Insects serve no purpose that chickens or hogs dont. They are about the same when talking about feed in to protein out, and talking about it from an economics perspective... oh my god bugs are expensive. Eat the chicken sandwich and pork chop instead of a burger and a steak, ok.

Cattle eat grass. The problem is, we've turned all our grass into urban sprawl. So now we have to feed them a mixture of corn, oats, straw, and whatever the hell else. We ship grains in from China to feed our cows that we keep in cages because it's more profitable to sell the pastures to real estate developers than to use them to raise cows.

In order for a cow to be considered legally "grass fed", it can't eat anything except whatever's in the pasture. This is almost entirely grass, plus certain edible flowers like clover if any happens to be growing there.

Grass fed beef is also objectively superior to "conventional" beef, because it's how cows were meant to grow. Buy a grass fed and a conventional steak and try them side by side. I guarantee you the grass fed one will taste significantly better.

The problem isn't cows, the problem is that we're letting too many people in and are running out of pastures in a desperate bid to house them all.

I think you got it with too many people. It's not that everything is paved over, precisely. It's that you can't feed this many people this much meat while free grazing everything.

Which is exactly what the globalists are saying, but they want tons of servants, I guess. Thus, vegetarianism and bug eating.

Another element of this is that in industrial agriculture, you're not gathering all the energy from immediate solar input. You're fertilizing crops with petroleum products and running your tractors off diesel. This system can't work without taking energy out of the crust. Not that I'm arguing for peak oil.

Urban sprawl caused by the reliance on cars, which necessitates tens of thousands of acres of wasted land that could have been used for farms, or businesses.
